Summer is already here! And with it, the warm weather. That’s why it’s important to stay well hydrated and follow a balanced diet.

In this article, we suggest several salad recipes to start summer in the healthiest way possible.

WATERMELON AND FETA CHEESE SALAD

Ingredients:

  • ¼ Watermelon
  • 200g Feta cheese
  • 1 Handful freshly chopped mint
  • Juice of ½ lemon
  • Virgin olive oil
  • Salt and pepper to taste

Steps to follow:

  1. Mix the watermelon, feta cheese and mint together in a bowl.
  2. Whisk the olive oil with the lemon juice, salt and pepper in a small container.
  3. Pour the dressing on the salad, mix gently and voilà!

QUINOA TABOULEH WITH VEGETABLES

Ingredients

  • 1 Cup cooked quinoa
  • ½ Cucumber
  • ½ Red pepper
  • 150g Cherry tomatoes
  • ¼ Red onion
  • Juice of ½ lemon
  • Fresh parsley
  • Virgin olive oil
  • Salt and pepper to taste

Steps to follow

  1. Dice all of the vegetables.
  2. In a bowl, mix the quinoa, cucumber, pepper, tomatoes, red onion and parsley.
  3. Whisk the olive oil with the lemon juice, salt and pepper in a small container.
  4. Pour the dressing on the salad, mix well, leave to rest for 30 minutes and voilà!

SPINACH AND FETA CHEESE SALAD

Ingredients

  • 150g Fresh spinach
  • 1 Cup strawberries
  • 40g Walnuts
  • 100g Goat’s cheese
  • 50ml Balsamic vinegar
  • 1 Drizzle honey
  • Virgin olive oil
  • Salt and pepper to taste

Steps to follow

  1. Chop the strawberries, walnuts and goat’s cheese into pieces
  2. Mix the chopped ingredients in a bowl with the spinach.
  3. Whisk the balsamic vinegar, olive oil, honey, salt and pepper in a small container.
  4. Pour the dressing on the salad, mix gently and voilà!
